18 - 1 small garlic clove
19 - 1/4 cup extra virgin olive oil
20 - 1/4 teaspoon salt
21 - 1/8 teaspoon black pepper

# How to Make It:

01 - Set oven to 425°F and allow to preheat for 10 minutes.
02 - Arrange all diced and sliced vegetables on a large baking sheet. Drizzle with 2 tablespoons olive oil, sea salt, and black pepper. Toss thoroughly to ensure even coating.
03 - Place baking sheet in preheated oven and roast for 25-30 minutes, stirring halfway through cooking, until vegetables are tender with light caramelization on edges.
04 - Rinse brown rice under cold water. Combine rice, 3 cups water, and 1/2 teaspoon salt in a medium saucepan. Bring to boil, reduce heat to low, cover, and simmer for 30-35 minutes until rice is tender and liquid is absorbed. Fluff with fork.
05 - Combine fresh parsley, cilantro, basil, lemon juice, garlic clove, 1/4 cup extra virgin olive oil, salt, and black pepper in blender or food processor. Blend until smooth consistency is achieved.
06 - Divide cooked brown rice evenly among four serving bowls. Top each with roasted vegetables and drizzle generously with herb sauce.

# Expert Suggestions:

01 -
  • The vegetables are so forgiving that even if you roast them a few minutes longer, they'll only taste better and sweeter.
  • One bowl feeds you well without making you feel heavy, which means you can actually enjoy the rest of your day.
  • That herb sauce is genuinely addictive and works on absolutely everything you make next.
02 -
  • Don't crowd the baking sheet or vegetables will steam instead of roast, which I discovered the hard way when I tried to make this for eight people using one pan.
  • Taste your herb sauce before adding it to the bowls because lemon juice varies in strength, and you might want it brighter or more subtle depending on your mood.
03 -
  • Pat your vegetables dry before roasting so they actually caramelize instead of steaming, and this one small step elevates everything.
  • Keep extra herb sauce on hand because it transforms roasted potatoes, scrambled eggs, grilled fish, and even plain bread into something memorable.
