# How to Make It:
01 - Set oven to 425°F and allow to preheat for 10 minutes.
02 - Arrange all diced and sliced vegetables on a large baking sheet. Drizzle with 2 tablespoons olive oil, sea salt, and black pepper. Toss thoroughly to ensure even coating.
03 - Place baking sheet in preheated oven and roast for 25-30 minutes, stirring halfway through cooking, until vegetables are tender with light caramelization on edges.
04 - Rinse brown rice under cold water. Combine rice, 3 cups water, and 1/2 teaspoon salt in a medium saucepan. Bring to boil, reduce heat to low, cover, and simmer for 30-35 minutes until rice is tender and liquid is absorbed. Fluff with fork.
05 - Combine fresh parsley, cilantro, basil, lemon juice, garlic clove, 1/4 cup extra virgin olive oil, salt, and black pepper in blender or food processor. Blend until smooth consistency is achieved.
06 - Divide cooked brown rice evenly among four serving bowls. Top each with roasted vegetables and drizzle generously with herb sauce.
